I checked for whatever vegetables are available in our refrigerator. But then some of them are not yet good for my 20 months old baby. So, the only ones I could use were potatoes, carrots and peas. So with that I came up with a dish comprised of vegetables which is actually an assignment for my online study on Child Nutrition and Cooking.

After peeling and cutting the potato, carrots, garlic and onion, I preheated the electric cooker and placed a small amount of oil in it. Then I placed the garlic first and then the union. After a few seconds, I added the carrots. I also added water and soy sauce. After seeing that the carrots are nearly cooked, I added the potato and the peas. For flavoring, I placed a small amount of salt. I let it cook for around 3 minutes. And then it’s done.

I just separated them for plating and added onions as garnish. My daughter immediately ate it. The funny thing is, every time she sees the picture, she would drag me and tell me she wants to eat it again. For me, it’s a compliment.

You can also do this using different vegetables. The goal is to make your children eat veggies and give them the right nutrition.  Cooking vegetables in different colors can make your child feel excited to eat them. So, combine them to come up with a “rainbow” dish of veggies.

  1. This recipe is very inviting! It's very simple based on the design on the picture. And I think this is suited for those who are on diet. Anyway, thank you for sharing this recipe to us!
