If your little one loves pasta instead of rice, this meal is perfect because it is complete with the nutrients they need. Aside from that, this is also super easy! I made this for my Cooking assignment in my online study for Child Nutrition. Check on the recipe below.

No-Bake Macaroni & Cheese
2 cups whole-wheat elbow noodles
1 3/4 cups low-fat milk, divided
3 tablespoons flour
1/2 teaspoon salt
3/4 cup shredded extra-sharp Cheddar cheese
sweet ham (amount depends on you)
1. Bring a large pot of water to a boil. Add a few amount of oil and salt then place pasta. Cook pasta for 4 minutes. Drain after cooking.
2. Fry sweet ham and slice it into small squares. Set aside.
2. Meanwhile, heat 1 1/2 cups milk in another large pot over medium-high heat until just simmering. Whisk the remaining 1/4 cup milk, flour and salt in a  bowl until combined. Add it to the simmering milk while whisking constantly, until the mixture is thickened. Remove from the heat and whisk with cheese until cheese is melted. I grated cheese on it so it is easier to melt it. Then add the cooked ham.
3. When done, place pasta on pan together with the sauce.
Nutrition Bonus: Vitamin C (70% daily value), Calcium (40% dv), Vitamin A (25% dv), Magnesium (16% dv).
Home Made Chicken Nuggets

For this part, I am showing you some screenshots from the video lecture we have in my Child Nutrition course from Standford Medicine with Prof. Maya Adam.
Do away from buying frozen nuggets or those that are ready to fry because they are not good for your kid’s health. It contains 38 ingredients that could be harmful including dimethypolysiloxene, an anti-foaming agent used to make silly putty and tertiary butyl hydroquinone (TBHQ), a derivative of petroleum.

That is why it is better if you make your own chicken nuggets. Buy chicken that is free from bones, it comes from the breast part and you can get them from the market. Here are what you need to do.

1. Slice chicken into the size of a nugget. Be sure you wash your hands after slicing because raw chicken can carry salmonella bacteria which is responsible for most cases of food poisoning. Always wash cutting boards, knives and hands after working with a raw chicken. Then place some salt for flavor. You can also add pepper if you want to.

2. In three separate containers place flour, egg and then bread crumbs. You will roll your chicken on the flour, dip it in the egg and then roll it on the bread crumbs. Then your chicken is ready for frying.

3. Fry it with olive oil until golden brown. Then enjoy your healthy chicken nuggets. 

For this meal, I also made a mayo+ketchup to pair with the chicken nuggets but you can skip this part too.

This is a complete meal with carbohydrates, protein and a fruit as dessert. Fruits can also be a substitute for vegetables. This is a meal that can be loved by both kids and adults!
